Honey-Almond Fish

Ingredients:

  • 1/2 cup crushed almonds (I prefer them salted and roasted, but you can use any nuts you like)
  • 2 TBSP diced red onions
  • 2 TBSP honey
  • basil leaves (or dried basil, but fresh is absolutely better)
  • olive oil
  • 1 TBSP butter or plant-based substitute

Directions:

  1. Bake or fry any white or light fish, like tilapia, sole, trout, etc.
  2. In a small fry pan, sauté red onions in a little oil until cooked.
  3. Add crushed almonds to pan until toasted.
  4. Add butter and let melt in pan.
  5. When butter is melted, add honey and torn or sliced basil leaves. Combine everything well in pan.

Serve over cooked fish.
