Persian Chicken

Persian Chicken with spinach and onions, plated with roasted cauliflower and carrots with thyme.

Ingredients:

  • Chicken thighs or filets
  • 2 TBSP oil
  • 1 tsp turmeric
  • 1/2 tsp salt
  • 1/3 c water
  • 1 TBSP lemon juice
  • Onion, sliced thin
  • Diced garlic
  • Spinach

Directions:

Mix oil, turmeric, salt (and pepper if you want). Coat chicken.

Brown chicken in pan for a few minutes.

Remove chicken from pan and sauté onions.

When onions are cooked, add water, garlic and lemon juice, and simmer for a few minutes.

Lower heat and add chicken and spinach. Cover and cook about 10 minutes until chicken is done.
