Breakfast for Dinner—Eggs & Rice

Ingredients:

  • Rice, cooked
  • Onions and Peas
  • Eggs, cooked how you like them but we prefer over easy so the eggs can mix with the rice
  • Ham or another protein
  • Avocado
  • Salt and pepper, to taste

Directions:

  1. Make rice as directed.
  2. Sauté diced onions in butter or oil until cooked. Add a little salt.
  3. While onions cook, put frozen peas in microwave until cooked.
  4. Mix onions and peas into rice to make pilaf. Ratios really don’t matter too much with this recipe—just use what you like.
  5. If using a protein that needs to be cooked first, like (raw) sausage or chicken, cook that before the eggs. If using deli meat, you can choose to heat it after the eggs or just add diced meat to the pilaf to warm it.
  6. Cook eggs as desired. Add salt and pepper as usual.
  7. Slice avocado while eggs cook.
  8. Serve eggs over the pilaf with protein, add sliced avocado and mix together or eat however you like.
