Edamame Pasta Salad

Ingredients:

  • Cooked pasta, run cool water over it in the strainer for serving this cool
  • Cooked edamame
  • Cooked or raw, sliced red bell pepper. You can use any color you like.
  • Optional: grated Parmesan or Romano cheese

Directions:

  1. Mix pasta and veggies in the pasta pot, or a separate bowl if serving cool.
  2. Dress with balsamic vinegar or olive oil and lemon or lime juice.
  3. Add cheese to the top.

Pro tip: You can use any veggies here, really.
