An easy recipe from the Food Network.
INGREDIENTS
1 pound broccolini
1 tablespoon olive oil
1 teaspoon lemon zest
1 tablespoon lemon juice
1/4 teaspoon salt
Pinch of freshly ground black pepper
DIRECTIONS
- Wash and trim the broccolini and steam for 5 minutes, until it is crisp yet tender. Drain.
- In a small bowl, whisk together the oil, zest, lemon juice, salt and pepper. Drizzle the dressing over the broccolini and toss to coat.
A variation:
I’ve seen recipes that add crushed red pepper instead of black pepper. But I think you could also add it after the fact, since the dressing is tossed with warm broccolini anyway. That way everyone can add their own heat.
