Peach-Glazed Salmon

Can’t wait to try this one this summer:

Ingredients:

  • 4 salmon filets – 6 oz
  • 2 peach – large and pitted
  • 1 TBSP ginger – fresh is best or use 1 teaspoon of the spice
  • ½ lemon – juiced, approx. 2 TBSP
  • 1 TBSP honey – or agave
  • 1 TBSP water
  • 2 teaspoon coconut aminos – or soy sauce
  • ¼ teaspoon sea salt
  • Olive oil for cooking salmon

Directions:

  1. dry the salmon and set aside.
  2. Add peach (with or without skin), ginger, lemon, honey, water, soy (or aminos or tamari if you’re gluten-free), and salt to a food processor and blend until it’s mostly smooth.
  3. Save some of the marinade to use on top of the finished salmon, then pour the marinade over the salmon and let it sit in the fridge for at least 20 minutes.
  4. Pan fry or broil the salmon to cook.
  5. Spread the saved marinade over the salmon and eat.
