Ingredients:
- 1/2 TBSP garlic
- 2 tsp. lemon juice
- 2 TBSP butter or Earth Balance
- 1/2 Cup turkey or chicken broth
- fresh parsley (optional)
- chicken breasts
- 2 tsp. flour or corn starch, 1 for coating chicken, 1 for sauce
Directions:
- Finely chop garlic, put lemon juice in a small bowl.
- Pat chicken dry, season with salt/pepper, and coat with flour or corn starch.
- Pan fry chicken until fully cooked. (3-4 minutes per side) Transfer to a plate.
- To same skillet, add garlic, 1 TBSP butter, 1 tsp. flour/corn starch. Cook, stirring, over medium heat about 30 seconds.
- Stir in broth, bring to simmer, cook about 1 minute until thickened.
- Stir in parsley, 1 TBSP butter, and lemon juice.
Serving suggestions:
Serve over polenta or rice with a side veg. Wilted spinach with garlic is great with this entree.
