So great for summer! This should make enough for 2-3 people.
SALAD INGREDIENTS:
- 1 plum tomato
- 15 ounce can of black beans, rinsed and drained
- 5 ounces of corn
- 1 lime
- 1 orange
- 2 TBSP oil
- 1 TBSP red or white wine vinegar or other acid like lime, lemon or orange juice
BLACK BEAN & CITRUS SALAD DIRECTIONS:
- Rinse produce and black beans.
- Cut tomato into 1/2-inch pieces.
- Combine tomato, beans and corn in bowl.
- Finely grate half of the lime and orange zest.
- Squeeze half the lime juice into the bowl.
- Add oil, vinegar and a pinch of salt.
- Toss until fully mixed and add slices of the lime on the side. Enjoy!
PRO TIPS:
- You can add cilantro if you’re one of those people who like it. (I, dear reader, am not.)
- Add protein: bake some chicken breasts with cumin and garlic, and/or turmeric, or even some strips of steak would be good in this. Of course, I also like kielbasa with black beans and here is no different.
- I think some cubed feta might be good in this too, but I can’t eat that so I haven’t tried it. But you might!
