Black Bean & Citrus Salad

So great for summer! This should make enough for 2-3 people.

SALAD INGREDIENTS:

  • 1 plum tomato
  • 15 ounce can of black beans, rinsed and drained
  • 5 ounces of corn
  • 1 lime
  • 1 orange
  • 2 TBSP oil
  • 1 TBSP red or white wine vinegar or other acid like lime, lemon or orange juice

BLACK BEAN & CITRUS SALAD DIRECTIONS:

  1. Rinse produce and black beans.
  2. Cut tomato into 1/2-inch pieces.
  3. Combine tomato, beans and corn in bowl.
  4. Finely grate half of the lime and orange zest.
  5. Squeeze half the lime juice into the bowl.
  6. Add oil, vinegar and a pinch of salt.
  7. Toss until fully mixed and add slices of the lime on the side. Enjoy!

PRO TIPS:

  • You can add cilantro if you’re one of those people who like it. (I, dear reader, am not.)
  • Add protein: bake some chicken breasts with cumin and garlic, and/or turmeric, or even some strips of steak would be good in this. Of course, I also like kielbasa with black beans and here is no different.
  • I think some cubed feta might be good in this too, but I can’t eat that so I haven’t tried it. But you might!
